Compare like with like.
Two venues can have similar sales and quite different results. Food and drink mix, opening hours, staffing requirements, delivery activity and the local pattern of trade all affect the comparison.
I bring the records together, check that the definitions and periods match, and help you understand the differences that matter.
The work suits small groups with usable records but no dedicated commercial analyst, or where the owner needs additional help with a specific question.
What we can examine.
- Comparable trading periods: allowing for different opening days, hours, closures and seasonal patterns.
- Sales and product mix: the balance of food, drink, dine-in, takeaway and delivery.
- Staffing in context: service needs, preparation and the shape of the week.
- Consistent records: how costs, categories and shared expenses are recorded across sites.
- Practical priorities: which questions need attention at group level and which belong to an individual venue.
A higher labour percentage is not automatically a sign of a badly run venue. The operating context matters.
A shared view you can use.
A review brings the findings into a clear written report and action plan. We work through them together and agree what to check or test next.
Ongoing support can provide regular reporting, a discussion of changes in trading and analysis of new questions across the group.
Scope and fees.
Group projects are quoted individually after a sample of the records has been checked. The number of sites, quality and consistency of information, and depth of analysis determine the scope.
The written proposal confirms the work, timing, terms and total payable. The single-site indicative monthly fee and founding review offer should not be taken as a quote for a group project.
